Ingredients

  • Ezy Duck Breast or Leg Confit
  • Apricot & Almond Cous Cous
    • 3 tbs dried apricots, diced
    • 1 tbs Toasted Almonds, slivered
    • ¼ Red Onion, diced
    • ½ Cup Cous Cous
    • ½ Cup Boiling Water
    • 1 tsp Butter
    • 1 tsp Coriander Seed (ground)
    • Salt & Pepper
    • 1 cup Watercress

Method

  1. Prepare Ezy Duck Confit in oven, stovetop or microwave.
  2. To prepare cous cous, place boiling water in a bowl, add cous cous, then cover and stand for 5 minutes.  Add butter, coriander and salt and pepper to taste, then mix through with a fork until light & fluffy.
  3. Add apricots, almonds, onion and mix until combined.
  4. Plate up cous cous on a bed of watercress with Ezy Duck to serve.
